coconut macadamia nut cookies
I first made these cookies for St. Patrick's Day. Green food coloring was added for fun. This is a family favorite and requested often.

Ingredients For coconut macadamia nut cookies

2 cflour

3/4 csugar
-
1 cbrown sugar, firmly packed

1/2 cbutter ( cold, salted)

1/2 tspsalt

2eggs
-
1 tspbaking powder

1 tspalmond extract

2 tspvanilla extract

1 ctoasted shredded coconut
-
1 ctoasted macadamia nuts, coursely chopped

1 Tbsppineapple juice concentrate

food coloring optional
How To Make coconut macadamia nut cookies

1Preheat oven at 375 degrees. Mix brown and cane sugars with butter until well blended. Add extracts, eggs and pineapple juice. Beat well.

2Sift flour, salt and baking powder. Slowly add it to the butter and sugar mixture. Beat until smooth. Mix in coconut and macadamia nuts.

3Scoop onto baking sheet with a spoon and bake from 10-15 minutes until lightly browned on the edges. Remove from baking sheet and place on cooling racks.
