    IN A BOWL, BEAT EGG WHITE ON MEDIUM SPEED UNTIL STIFF PEAKS FORM. GRADUALLY ADD SUGAR ; BEAT 8 MINUTES LONGER, FOLD IN COCONUT . DROP BY ROUNDED TABLESPOONS 2 INCHES APART ONTO A PARCHMENT-LINED BAKING SHEET. BAKE AT 325* FOR 18-20 MINUTES OR UNTIL FIRM TO THE TOUCH. COOL FOR 1 FULL MINUTE BEFORE REMOVING TO A WIRE RACK. STORE IN AN AIRTIGHT CONTAINER.
