Another old recipe of my Grams. Always loved these soft chocolate cookies. Enjoy!

Ingredients For ~ coconut island cookies ~ grams

  • 3 oz
    unsweetened, chocolate - i used only 2 ounces
  • 1/4 c
    hot strong coffee
  • 1/2 c
    butter, softened
  • 1 c
    brown sugar, firmly packed
  • 1
    egg
  • 2 c
    flour
  • 1/2 tsp
    each - baking soda & salt
  • 1/2 c
    sour cream
  • 1/2 c
    coconut
  • some
    coconut extract would be good in these cookies as well - optional
  • FROSTING
  • 1 1/2 oz
    unsweetened chocolate
  • 1/4 c
    sour cream
  • 1 Tbsp
    softened, butter
  • 1 1/2 - 2 c
    confectioners' sugar
  • flaked
    coconut for garnish

How To Make ~ coconut island cookies ~ grams

    Preheat oven to 375 degree F. Spray baking sheet with non stick cooking spray. Set aside. In a small saucepan, combine chocolate with 1/4 cup hot coffee, melt over low heat, stirring constantly.

    In a medium mixing bowl, cream sugar with the butter.

    Add egg and chocolate / coffee mixture. Mix well.

    Sift flour, soda and salt - add to coffee mixture alternately with sour cream , ending with flour.

    Stir in coconut. Drop by spoonfuls onto prepared baking sheet.

    Bake for 10 - 12 minutes. Move to cooling racks.

    Frosting: In a medium saucepan, combine chocolate sour cream and butter, heat until chocolate melts.

    Remove from heat and stir in sugar, blending until consistency for spreading.

    Frost warm cookies and sprinkle with coconut. Enjoy these soft, yummy cookies.
