Another old recipe of my Grams. Always loved these soft chocolate cookies. Enjoy!

Ingredients For ~ coconut island cookies ~ grams

3 ozunsweetened, chocolate - i used only 2 ounces
-
1/4 chot strong coffee
-
1/2 cbutter, softened
-
1 cbrown sugar, firmly packed

1egg
-
2 cflour
-
1/2 tspeach - baking soda & salt
-
1/2 csour cream
-
1/2 ccoconut
-
somecoconut extract would be good in these cookies as well - optional
- FROSTING

1 1/2 ozunsweetened chocolate
-
1/4 csour cream
-
1 Tbspsoftened, butter
-
1 1/2 - 2 cconfectioners' sugar

flakedcoconut for garnish
How To Make ~ coconut island cookies ~ grams

1Preheat oven to 375 degree F. Spray baking sheet with non stick cooking spray. Set aside. In a small saucepan, combine chocolate with 1/4 cup hot coffee, melt over low heat, stirring constantly.

2In a medium mixing bowl, cream sugar with the butter.

3Add egg and chocolate / coffee mixture. Mix well.

4Sift flour, soda and salt - add to coffee mixture alternately with sour cream , ending with flour.

5Stir in coconut. Drop by spoonfuls onto prepared baking sheet.

6Bake for 10 - 12 minutes. Move to cooling racks.

7Frosting: In a medium saucepan, combine chocolate sour cream and butter, heat until chocolate melts.

8Remove from heat and stir in sugar, blending until consistency for spreading.

9Frost warm cookies and sprinkle with coconut. Enjoy these soft, yummy cookies.
