chewy strawberry sugar cookies

We were given a lot of strawberries so I had to figure out what to do with them so they wouldn't go bad. This is one of the things I came up with and the family loved them. I hope you enjoy them as much as my kids did. I prefer them with fresh strawberries but you can also make them with strawberry extract.

Ingredients For chewy strawberry sugar cookies

1 cbutter softened

1 1/2 cgranulated sugar

1egg

3 Tbspstrawberries or 1 1/2 teaspoon strawberry extract

2 3/4 call purpose flour

1/2 tspbaking powder
-
1/2 tspsalt

1 tspvanilla
-
1/2 cgranulated sugar for rolling cookies

1 tspred sugar crystals (optional)
How To Make chewy strawberry sugar cookies

1Preheat oven to 350ºF

2Use nonstick cookie sheet or line with parchment paper.

3Blend together butter and sugar for about 3 minutes.

4Add egg to butter and sugar blending well.

5Add strawberries or strawberry extract blending well.

6Stir in flour, baking powder, salt and vanilla with spoon.

7Scoop cookie dough by the teaspoon or tablespoon full depending what size you want the cookies. Roll into a ball.

8Add granulated sugar and red sugar crystals in a large bowl for rolling cookie dough in before baking.

9Roll each ball evenly, completely coating cookie dough.

10Place on baking sheet 1 1/2"-2" apart and lightly press each cookie down.

11Bake 10-15 minutes or until lightly browned.
