Every now and then I love a good Chai Latte... the spicy cardamom aroma is heavenly. I decided to make a cookie that could capture that yummy flavor. These soft and spicy cookies were the result. They are perfect with a cup of Earl Grey!

Ingredients For chai latte cookies
- CHAI SPICE MIX:

2 Tbsppumpkin pie spice
-
1 1/4 Tbspground cardamom
-
1 tspground allspice
-
1/4 tspground white or black pepper
- COOKIE:
-
1/2 cbutter, softened
-
3/4 csugar
-
1 lgegg
-
1 tspvanilla
-
1 3/4 cflour
-
1 tspground flax seed (optional)
-
2 tspchai spice mix (see above)
-
1 tspcream of tartar
-
1/2 tspbaking soda
-
1/8 tspsalt (a pinch)

1/4 cbuttermilk
- CHOCOLATE CHAI DRIZZLE:
-
1/4 cbrewed coffee or tea, cooled to room temp.

2 cpowdered sugar
-
2 ozunsweetened chocolate, melted
-
1 tspchai spice mix (from above)
How To Make chai latte cookies

1Preheat oven to 350 degrees F. Line a baking sheet with parchment paper, set aside.

2In a small bowl or jar, combine ingredients for the chai spice mix, set aside.

3In a mixing bowl, cream together butter and sugar until well blended. Add in egg and vanilla until well blended. Set aside.

4In a separate bowl, combine flour, ground flax, chai spice, cream of tartar, baking soda, and salt; blend well.

5Alternately blend buttermilk and flour mixture into the butter mixture until well blended.

6Drop by teaspoonfuls onto prepared parchment paper. Bake in preheated oven for 8-10 minutes. Set on cooling rack until completely cooled.

7Meanwhile, melt chocolate. Add to powdered sugar, chai spice, and coffee (or tea). Stir well. Drizzle across cooled cookies.
