I want to use up some carrots I had and decided to modify three cookie recipes into one. Happily it turned out great. These cookies are light and airy. Enjoy!

Ingredients For carrot cookies

1 cshortening, butter flavor

3/4 csugar

2eggs
-
1 ccarrot, shredded

1 tsporange extract

2 call purpose flour

2 tspbaking powder

1/2 tspsalt

1 tspcinnamon
How To Make carrot cookies

1In a bowl, cream shortening (not butter) and sugar until light and fluffy.

2Add eggs and extract; mix well.

3Fold in carrots.

4Combine flour, cinnamon, baking powder and salt; gradually add to the carrot mixture.

5Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 400 degrees for 8-10 minutes or until lightly browned.

6Remove to wire racks to cool. Yield: 4 1/2 dozen.
