Next time I'll try fresh apples - what the heck! Maybe I'll try an apple extract with the dried apples to boost the apple flavor. If you have any tips - let me know!

Ingredients For carmel apple cookies

3 smapples-dehydrated

1/2 bagcarmel bits

2-1/4 cflour

1 tspbaking soda

1 tspsalt

1 cbutter
-
3/4 csugar

3/4 cbrown sugar

1 tspvanilla extract

2 lgeggs
How To Make carmel apple cookies

1Cream butter.

2Add sugars and blend.

3Add vanilla. Blend.

4Add eggs, one at a time, beating well after each addition.

5Gradually beat in dry ingredients.

6Chop apples (or crumble them!) and stir into mix.

7Add carmel bits. Mix to distribute.

8Place mixture into a bowl. Chill for 2 hours (or overnight).

9Preheat oven to 375F.

10Line cookie sheets with parchment paper (carmel is VERY sticky - so next time I may sprinkle flour on the sheets!).

11Using a teaspoon, drop cookies onto parchment -- allowing 2 inches between cookies (they spread).

12Roll in Chopped Peanuts (OPTIONAL!).

13Bake at 375 for 8-12 minutes (my gas oven likes to play with me!).

14Cool on the baking sheet for at least 5 minutes. I found that peeling the cookies off (take hot parchment paper in hand, turn upside down and peel cookie off) leads to less cookie stuck on the parchment - and a lot of creative swearing as you try to cool your hands down!
