Every year I try to make up goodies for friends and neighbors. This year, I wanted to make a caramel cookie bar to share but couldn't find a recipe I liked. So, I made this one up as I went along. Everyone who has taste-tested it loves it. I hope you do too.

Wow... everyone's going to love these. This cake is super rich. You taste chocolate, butterscotch, and nuts in every bite. It's chewy but a bit crunchy because of the nuts. The layer of caramel and icing top them wonderfully. It's a cross between toffee and fudge. We really loved the flavor of butterscotch and caramel in this easy cake. Super yummy!

Ingredients For caramel cookie bars from a cake mix

  • 1 box
    yellow cake mix
  • 2
    eggs
  • 10 Tbsp
    unsalted butter, room temp
  • 1/2 Tbsp
    caramel flavoring
  • 1 c
    chocolate chips
  • 1/2 c
    butterscotch chips
  • 1 c
    nuts, chopped
  • TOPPING
  • 8 oz
    caramels, melted
  • 1 pkg
    white frosting

How To Make caramel cookie bars from a cake mix

  • Greasing a baking dish.

    Preheat oven to 325. Grease a 9 x13 cake pan.
  • Eggs, butter, and caramel flavoring mixed together.

    In a medium bowl cream eggs, butter, and caramel flavoring.
  • Sifting cake mix.

    Sift cake mix into a large bowl.
  • Pouring cake mix into butter mixture.

    Pour cake mix over butter and eggs.
  • Mixing ingredients together.

    Stir to moisten. (This will be very thick.)
  • Stirring in nuts and candy.

    Next stir in candy and nuts.
  • Batter poured into a baking dish.

    Spread over greased cake pan evenly.
  • Toothpick coming out clean.

    Bake for 25 minutes or until a toothpick inserted in the middle comes out clean.
  • Caramels with a little milk.

    While mixture is baking melt caramels in a pan over boiling water. You may need to add a little cream or butter to thin caramel.
  • Stirring until caramels melted.

    Stir until caramels are melted and it's thin enough to spread.
  • Keeping melted caramel warm.

    Cover and keep just warm enough to spread.
  • Cake cooling.

    Remove cake from oven and cool for 10 minutes.
  • Melted caramels spread over the cake.

    Then pour warm caramel over the top of the cake and spread evenly. Allow to cool completely.
  • Frosting spread over the Caramel Cookie Bars.

    When the cake is cool and caramel is set, spread frosting over the top of the caramel.
  • A slice of Caramel Cookie Bars decorated with chocolate and butterscotch chips.

    Decorate as desired or leave plain. Cut into 24 equal pieces.
