I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

Ingredients For banana - oat - chocolate chip cookies

3/4 ccrisco

1 csugar

1egg

1 tspvanilla

2 lgripe banana's or 1 cup ( mashed )

1 1/2 call purpose flour

1/2 tspsalt

1 tspbaking soda
-
1 tspground cinnamon
-
1/2 tspnutmeg
-
2 cquick oats
-
1 - 1 1/2 cchocolate chips - i use semi-sweet
How To Make banana - oat - chocolate chip cookies

1Preheat oven to 375 degree F. Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.

2Combine the flour, salt, baking soda, cinnamon and nutmeg.

3Add to creamed mixture and mix well. Stir in bananas, oats and chocolate chips.

4Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.

5Remove immediately to wire racks to cool.
