My late husband's favorite pie, although he was not overly fond of desserts. Developed this recipe after our trip to Ochoa Rios in 1990.

Ingredients For ochoa rios pecan fudge pie

1/4 cbutter

3/4 cbrown sugar, lightly packed

3eggs
-
12 ozchocolate morsels, melted

2 tspinstant coffee powder
-
1 tsprum extract, or dark rum

1/4 cflour
-
1 cchopped pecans
-
1/2 cflaked coconut
-
1unbaked pie shell
How To Make ochoa rios pecan fudge pie

1Make you pie crust. Set aside.

2Make the fudge filling. Cream butter and sugar. Add eggs, one at a time, beating well after each addition.

3Add melted chocolate, coffee powder and rum. Stir in flour, pecans and coconut.

4Pour into your unbanked pie shell.. Bake at 375 degrees for 25 minutes or until done.
