My late husband's favorite pie, although he was not overly fond of desserts. Developed this recipe after our trip to Ochoa Rios in 1990.

Ingredients For ochoa rios pecan fudge pie

  • 1/4 c
    butter
  • 3/4 c
    brown sugar, lightly packed
  • 3
    eggs
  • 12 oz
    chocolate morsels, melted
  • 2 tsp
    instant coffee powder
  • 1 tsp
    rum extract, or dark rum
  • 1/4 c
    flour
  • 1 c
    chopped pecans
  • 1/2 c
    flaked coconut
  • 1
    unbaked pie shell

How To Make ochoa rios pecan fudge pie

  • 1
    Make you pie crust. Set aside.
  • 2
    Make the fudge filling. Cream butter and sugar. Add eggs, one at a time, beating well after each addition.

    Add melted chocolate, coffee powder and rum. Stir in flour, pecans and coconut.

    Pour into your unbanked pie shell.. Bake at 375 degrees for 25 minutes or until done.
