Growing up we always had this decadent treat at Christmas. For the longest time I thought it was a family recipe because it was my Aunt who brought it. But regardless of where it came from it has always been a great family favorite. It still reminds me of the holidays no matter what time of year I make it !

Ingredients For nanaimo bars

  • crust
  • 1/2 c
    butter
  • 1/4 c
    granulated sugar
  • 5 Tbsp
    cocoa powder
  • 1
    egg - beaten
  • 1-1/4 c
    graham cracker crumbs
  • 1 c
    shredded coconut
  • 1/4 c
    chopped nuts - pecans or walnuts
  • custard layer ***see alternate at end of recipe
  • 1/2 c
    butter
  • 2 Tbsp
    milk or half n half
  • 2 Tbsp
    instant vanilla pudding mix
  • 2 c
    powdered sugar
  • chocolate layer
  • 4 oz
    semi sweet chocolate
  • 2 Tbsp
    butter

How To Make nanaimo bars

    For the crust layer In a double broiler, melt the butter, sugar and cocoa together. Stir in the egg and let mixture thicken. Remove from the heat and stir in the graham cracker crumbs, nuts, and coconut. Press the mixture into a greased 11 x 7 inch baking dish.

    For the custard layer Beat the butter until creamy. In small dish combine the milk and pudding mix and let it sit until it thickens. Add to the creamed butter and mix well. Slowly incorporate the powdered sugar until smooth and creamy. Spread the custard layer over the chocolate-graham layer. Chill until custard layer is cool and slightly firm.

    For the chocolate layer In a small saucepan, melt the chocolate and butter together over medium heat, stirring every 15 seconds, until melted and smooth. Remove from heat and let cool for several minutes before spreading over the custard layer. Cover with plastic wrap and chill in the fridge for several hours until layers are firm and set. Store in fridge.

    *** Alternate Custard Layer ** If you prefer the wonderful flavor of cream cheese please feel free to mix 8 oz softened cream cheese with 1 - 2 cups of powdered sugar and use it in place of the custard layer listed above.
