This delicious, moist lime cake would be a super cake for St Patty's day or even Easter...I made this cake last St Pat, but never got it posted. You can make it with or without the food coloring...I'm part Irish, so greens just fine with me...enjoy! My photos

Ingredients For zesty key lime cake

  • 1 - 18.25 pkg
    lemon cake mix
  • 1 1/3 c
    vegetable oil
  • 4
    eggs
  • 1 pkg
    (3 oz) lime jell-o
  • 3/4 c
    orange juice - i used fresh squeezed
  • green food coloring - optional
  • FROSTING
  • 1/2 c
    butter (1 stick), softened
  • 1 pkg
    cream cheese (8 oz), softened
  • 4 c
    confectioners' sugar
  • 3 - 31/2 Tbsp
    lime juice or to taste
  • 6
    drops green food coloring - optional

How To Make zesty key lime cake

    Preheat oven to 350 degree F. - 325 degree for dark baking pan. Spray a 9 x 13 cake pan with nonstick cooking spray.

    Combine all cake ingredients in mixing bowl. Add 3 drops green food coloring if you want a more intense green color.

    Bake according to directions on box (25-35 min.). Cool on cooling rack.

    For frosting: Beat butter and cream cheese together. Add juice and powdered sugar. Blend with mixer until smooth.

    Add 4-6 drops green food coloring if you would like green color for St. Patrick's Day.

    Frost cooled cake and refrigerate.
