Ingredients For yummy upside down cranberry cake

  • 1-1/2 c
    flour
  • 1-1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    cinnamon
  • 2/3 c
    packed, light brown sugar
  • 1/4 c
    butter
  • 1 c
    cranberries
  • 1/2 c
    coarsely chopped pecans
  • 1/4 c
    canola oil
  • 3/4 c
    sugar
  • 2 lg
    eggs
  • 1 tsp
    vanilla
  • 1 c
    light sour cream

How To Make yummy upside down cranberry cake

    Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, combine flour, baking powder, baking soda and cinnamon.

    In microwaveable bowl, place brown sugar and butter, microwave until melted, 10-30 seconds. Pour into bottom of pan. Sprinkle w/ cranberries and pecans.

    In another lg bowl, beat oil and sugar until fluffy. Beat in eggs, stir in vanilla. Beat in flour mix, alternately w/ sour cream. Pour batter over cranberries. Bake 25 mins, or until a toothpick inserted in center comes out clean.
