Ingredients For semolina cake (bassboossa)

  • FOR THE SYRUP
  • 1 1/4 c
    water
  • 1 1/4 c
    sugar
  • 1 Tbsp
    lemon juice
  • FOR THE CAKE
  • 2 c
    semolina
  • 1/2 c
    sugar
  • 3/4 c
    butter, melted
  • 1/4 c
    syrup
  • 1 c
    heavy cream, warmed

How To Make semolina cake (bassboossa)

    For the syrup: in a saucepan dissolve the sugar in the water over medium heat then add the lemon juice. Bring to boil then let it boil softly for 10 minutes. Set aside to cool.

    Preheat oven to 350 degrees, position rack in center of oven. Spray a 9 inch pan with cooking spray. In a bowl, mix semolina and sugar together. Melt the butter and add it to the mixture and mix well till all semolina is moistened.

    Add 1/4 cup cooled syrup, and the cream. Using a spoon, mix all ingredients together thoroughly. You might need to add more milk if necessary as the batter should be on the loose side. Pour batter into the prepared pan and smooth the top with the back of a spoon. Bake at 350 degrees for 30 - 40 minutes or till the top is darkish golden brown and the edges are browned.

    Take out of the oven and immediately pour the cool syrup all over. Cool completely before cutting into squares. Serve with a dollop of cream.
