I made these for the first time for a Valentines gathering, they were enjoyed by many and got good reviews. Try it with other cake mix flavors, lemon cake mix works well also. Just let your imagination be your guide!

These semi-homemade red velvet cream cheese brownies are perfect for Valentine's Day. They have the chocolaty red velvet flavor with a tangy cheesecake topping swirled in. Since they start with a box of red velvet cake mix, the texture is not as fudgy as a traditional chocolate brownie. But, even after they're sliced, they stay moist. We loved the bits of chocolate sandwich cookies in every bite.

Ingredients For red velvet cream cheese brownies

  • 1 box
    Duncan Hines red velvet cake mix
  • 2 lg
    eggs
  • 1/2 c
    vegetable oil
  • 4 Tbsp
    butter, melted
  • 10
    Oreo cookies, broke into chunks
  • CREAM CHEESE TOPING
  • 8 oz
    cream cheese, room temperature
  • 1 lg
    egg
  • 1/4 c
    granulated sugar
  • 1 tsp
    pure vanilla extract

  • Greasing the baking dish.

    Preheat oven to 350 and grease or spray with no stick spray a 9"x13" baking pan. If you want a thicker brownie, use a 9"x 9" pan.
  • Combine cake mix, egg, oil, and melted butter.

    In a bowl, combine cake mix, egg, oil, and melted butter. Stir to blend. The mixture will be slightly lumpy, and that's how you want it.
  • Fold in crunched-up Oreo cookies.

    Now, fold in crunched-up Oreo cookies. I used the Oreo red velvet cookies, but the regular chocolate ones work just fine. Also, you can amp it up with double stuff!
  • Spread batter evenly into the baking pan.

    In a mixing bowl, combine cream cheese, egg, sugar, and vanilla. Then beat with a mixer until creamy smooth.
  • Dollop the cream cheese mixture over the brownie layer.

    Now you can dollop the cream cheese mixture over the top of the brownie layer.
  • Swirl cream cheese mixture into the batter.

    Using a butter knife, swirl the cream cheese into the red velvet layer, being careful not to go deep into the red velvet layer. You just want the cream cheese layer to be on the surface of the brownie.
  • Baking the red velvet brownies.

    Bake for 30 to 35 minutes. The cream cheese will be a light, toasty golden color.

    Cut into desired-sized squares and serve. Store brownies in an airtight container in the fridge. Remove brownies from the fridge about an hour before serving. Also, if you want to dress them up, drop your brownie squares in a cupcake paper.
