These muffins, spiced w/ pumpkin are great for your morning coffee or as a snack. You can serve them as is, or make a cream cheese frosting for them.

Ingredients For pumpkin spiced carrot muffins

  • 2 c
    flour
  • 1-1/4 c
    light brown sugar, packed
  • 1 Tbsp
    pumpkin pie spice
  • 2 tsp
    baking soda
  • 2 c
    shredded carrots
  • 1 c
    flaked coconut
  • 1/2 c
    chopped walnuts
  • 3
    eggs, beaten
  • 1 c
    canola or coconut oil
  • 1/2 tsp
    vanilla

How To Make pumpkin spiced carrot muffins

    Heat oven to 375. Spray muffin cups w/ cooking spray. In lg bowl, combine flour, brown sugar, pumpkin spice and baking soda.

    In another lg bowl, combine remaining ingredients, mix well. Add carrot mix to flour mix, stir until combined.

    Spoon mix evenly into muffin cups. Bake 15-20 mins or until a toothpick inserted in center of muffin comes out clean.
