Oh yum! This crumb cake is what happens when pumpkin pie and spice cake get married. The cinnamon in the crumb topping along with the spice cake crust makes the deliciously aromatic. A creamy pumpkin filling adds a smooth texture to the cake. It's easy to prepare and sure to be a crowd pleaser at any gathering.

Ingredients For pumpkin spice crumb cake

  • 1 pkg
    spice cake mix (set 1 cup aside for topping)
  • 1
    egg, beaten
  • 1/2 c
    butter, melted
  • 1 Tbsp
    vegetable oil
  • 1 Tbsp
    water
  • PUMPKIN LAYER
  • 1 can
    pumpkin puree, 15 oz
  • 3
    eggs
  • 1/2 c
    white sugar
  • 1/4 c
    packed brown sugar
  • 3 tsp
    ground cinnamon
  • CRUMB TOPPING
  • 1/2 c
    white sugar
  • 4 Tbsp
    softened butter
  • 1 Tbsp
    ground cinnamon
  • 1 c
    reserved spice cake mix

How To Make pumpkin spice crumb cake

  • 9x13 baking pan sprayed with non-stick spray.

    Preheat oven to 350 degrees. Spray or grease one 9 x 13-inch pan.
  • Cake mix combined with butter, egg, water, and oil.

    Reserve 1 cup cake mix. In a large bowl, combine the remaining dry cake mix with 1 egg, 1/2 cup melted butter, vegetable oil, and water. Mix well, and then pat into prepared pan.
  • Pumpkin, sugars, and eggs in a bowl.

    In a separate large bowl, mix together the pumpkin, 3 eggs, 1/2 cup white sugar, brown sugar, and cinnamon.
  • Pumpkin mixture poured over crust layer.

    Pour over crust.
  • Reserved cake mix, cinnamon, butter and sugar in a bowl.

    In a small bowl, combine reserved 1 cup cake mix, 1/2 cup sugar, and 4 tablespoons softened butter and cinnamon.
  • Crumble poured over pumpkin layer.

    Crumble over pumpkin filling.

    Bake in preheated oven for 40 to 45 minutes. When cool sprinkle with powdered sugar, if desired.
