I wanted to make a cobbler with the most incredible Georgia peaches I get every year and this was my creation. I am doing my best to try and create recipes with what I have on hand and so this is what I had in my cupboards and freezer. It turned out to be one fantastic combination of flavors. It's certainly not your traditional peach cobbler but the rhubarb jam and gingerbread paired well with the peaches.

Ingredients For peachy rhubarb gingerbread cobbler

  • 4 lg
    peaches, peeled and sliced
  • 1 jar
    rhubarb jam
  • 1/4 c
    sugar
  • 1/2 tsp
    cinnamon, ground
  • 1/2 can
    ginger ale
  • 1 box
    gingerbread mix
  • 4 Tbsp
    butter, sliced on top

How To Make peachy rhubarb gingerbread cobbler

    Slice your peaches and mix with the cinnamon, sugar and the jar of jam. Pour into and 8 by 8 dish.

    Pour your dry gingerbread mix over the top and add your 1/2 can of ginger ale.

    Then, place 4 to 6 pats of butter on top. Bake at 350 degrees for 35 to 45 minutes or until cake is baked.

    Serve warm with some vanilla ice cream.
