This recipe belongs to a friend who got it from her mother. She said she always kept one in the freezer for emergencies. Never hurts!

    boiling water
  • 1 c
    quick oats
  • 1 1/2 c
    flour(self rising)
  • 1 tsp
    cinnamon
  • 1 c
    brown sugar
  • 1 c
    regular sugar
  • 2
    eggs
  • 1/2 c
    vegetable oil
  • TOPPING
  • 1/2 c
    sugar
  • 1 c
    pet milk
  • 1 stick
    margarine or butter
  • 1 tsp
    vanilla
  • 1
    egg
  • 1/2 c
    chopped pecans
  • 1/2 c
    shredded coconut

How To Make oatmeal cake

    POUR BOILING WATER OVER OATS AND LET STAND WHILE MIXING THE FOLLOWING: SIFT TOGETHER FLOUR, CINNAMON; ADD SUGARS, EGGS & OIL. THEN ADD OATMEAL MIXTURE.

    MIX WELL AND PUT IN GREASED 8 x 12 PAN AND BAKE AT 350 FOR 30 TO 40 MINUTES

    TOPPING: BOIL TOGETHER 1/2 C. SUGAR, 1 C. PET MILK, 1 STICK MARGARINE, 1 tsp VANILLA, 1 EGG, 1/2 C.COCONUT, 1/2 C. PECANS. COOK UNTIL AT PUDDING CONSISTENCY AND POUR OVER WARM CAKE. GOOD WARM OR COLD. FREEZES WELL TOO.
