strawberry cake

I had found a recipe in one of my cookbooks, that called for Strawberry pudding. I don't think I've ever seen such. Anyway, I decided to experiment with what I had, and this was my end results...we were very pleased with the outcome... Enjoy!

Ingredients For strawberry cake

  • 1 - 16.5 oz
    white cake mix
  • 1 sm
    box, strawberry gelatin
  • 2/3 c
    oil
  • 1/2 c
    water
  • 4
    eggs
  • 1/2 tsp
    strawberry extract
  • 3
    drops red food coloring - optional
  • 1/2 c
    pureed strawberries
  • 4 oz
    white chocolate chips - optional
  • GLAZE
  • 1/2 c
    puree strawberries-i used frozen, that had thawed /drained excess juice from thawing - can use fresh as well

    container store bought frosting, such as duncan hines - rich & creamy vanilla

How To Make strawberry cake

    Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a medium mixing bowl, add all cake ingredients, except for chips if using ( and mix on low till all is blended...then turn up mixer and beat another 3 minutes or until nice and smooth. Fold in chocolate chips now - if adding Pour into prepared pan and bake for 30 - 35 min or until pick comes out clean.

    In a small bowl empty contents of frosting from container and mix in the pureed strawberries, mix well to blend. Mine was thin, more like a glaze... I glazed each individual piece, instead of frosting the whole cake.
