Ingredients For mounds™ chocolate cupcakes
- COCONUT FILLING

1 - 8 oz. pkgcream cheese, softened

1/3 csugar

1egg
-
1/2 tspvanilla

1/8 tspsalt

1 cmounds™ sweetened coconut flakes
- CUPCAKES
-
3 call purpose flour
-
2 csugar
-
2/3 ccocoa
-
2 tspbaking soda
-
1 tspsalt
-
2 cwater
-
2/3 cvegetable oil
-
2 Tbspwhite vinegar
-
2 tspvanilla
How To Make mounds™ chocolate cupcakes

1Heat oven to 350 degrees. Line cupcake pans with paper baking cups.

2Prepare COCONUT FILLING: Beat all filling ingredients, except coconut, until smooth and creamy. Stir in coconut and set aside.

3Prepare CUPCAKE BATTER: In a large mixer bowl, stir together flour, sugar, cocoa, baking soda and salt.

4Add water, oil, vinegar, and vanilla. Beat on medium speed for 2 minutes.

5Fill baking cups 2/3 full. Spoon 1 level tablespoon of filling into center of each cupcake.

6Bake 20 to 25 minutes until pick inserted in the cake comes out clean.

7Remove from pan and cool completely on a wire rack.
