Ingredients For blueberry banana cake

1 1/2 ccanola oil

2 1/2 csugar

3eggs
-
3 cflour (all purpose) or 2 cups ap flour and 1 cup oat flour

1 tspbaking soda

3/4 tspsalt

1/2 cbuttermilk
-
2ripe bananas mashed
-
3/4 cblueberries, frozen or fresh

1 1/2 tspvanilla

1 cpecans , chopped, optional
How To Make blueberry banana cake

1Spray and flour cake baker. I used a bundt, but you could also do cupcakes, (will make 24), or make it in a loaf pan. It will take 2 loaf pans.

2In mixing bowl combine oil, sugar, eggs

3In separate bowl sift together flour, baking soda, salt

4Add buttermilk and flour mixture to oil mixture. Alternating 1/2 buttermilk then 1/2 flour mixture.

5Fold in bananas

6Add vanilla

7Toss blueberries with 1 tablespoon flour then fold into batter.

8Bake on 350* for 35-40 minutes (for bundt) or until a cake tester comes out clean.
