This is my mother's Christmas cake; she has made it for years. Top it with fruit salad .....it's great!

Ingredients For moms carrot cake

  • 2 c
    sugar
  • 1 1/2 c
    oil
  • 3
    eggs
  • 1 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon
  • 2 3/4 c
    grated carrots
  • 5 Tbsp
    hot water
  • 1/2 c
    chopped walnuts (optional)

How To Make moms carrot cake

  • 1
    Mix the first 4 ingredients; it will be thick. Mix all dry ingredients and gradually add to batter. If using self rising flour, only add the baking soda. Mix together; fold in grated carrots and walnuts (optional). Add water; mix well. Bake at 350 for 55 to 60 minutes, depending on what type of pan you use; I like the bunt pan. Let cool and frost with cream cheese frosting.
