mini pumpkin spice cupcakes
These are not an overly powered with pumpkin taste nor overly sweet. They are light with a subtle fall flavor.......... I hope you try them and enjoy. I'd be interested in knowing your thoughts.

Ingredients For mini pumpkin spice cupcakes

17.5 oz pkgpumpkin bar mix
-
1 cbaking flour ( i used bob's red mill bisquit & baking flour)

1 tsppumpkin spice
-
1/4 tspsalt
-
4eggs
-
1/2 cbutter (melted & cooled)
-
1 cliquid (water,milk,creamer) i used half water/half creamer)
-
1/4 cpumpkin pie syrup (generally used for flavoring coffees, etc.)
How To Make mini pumpkin spice cupcakes

1Sift together flour, pumpkin bar mix, salt, pumpkin spice.

2In mixer on low speed add to flour mixture: one egg at a time until blended, followed by melted butter, liquid, remaining ingredients, mix on medium to high speed for two minutes

3Bake at 350 for (mini-cupcakes) 8-9 minutes. Cool on wire rack. Once cooled, frost with my MAPLE FROSTING (found on my page) or any frosting of your choice.
