My mom had some bananas too ripe to eat, so she sent them to me, knowing I'd bake some kind of yummy out of them... My son went ape over this cake...lol!! It's so moist and full of banana flavor. A bit on the denser side...It's safe to say it won't be lasting long. Enjoy! My photos

1 tspbaking soda

1/2 tspsalt

1 1/2 csugar

1/4 cvegetable oil

2eggs

2 tspvanilla

4ripe bananas - smashed

1 cbuttermilk

1/2 cchopped nuts - optional - i used pecans
- FROSTING

1 - 8 ozcream cheese, softened

1 cconfectioners' sugar
-
pinchsalt
-
1 1/2 tspvanilla extract

1 1/2 cheavy cream
How To Make luscious banana cake w / cream cheese frosting

1Preheat oven to 375 degrees F. Lightly grease a 9 x 13 baking pan; set aside.

2Mash bananas with a fork.

3In a bowl, whisk together the flour, baking soda and salt. Set aside.

4In a large mixing bowl, beat the sugar and oil together on medium speed until combined.

5Add the eggs and beat till combined.

6Now, beat in the vanilla and mashed bananas.

7Reduce mixer speed to low. In three additions, add flour mixture, followed by buttermilk, ending with flour. Stir in nuts now, if using. Before pouring batter into prepared pan, give the batter one last good stir with spatula.

8Pour into the prepared pan.

9Bake for 25 - 30 minutes until golden brown and pick comes out dry. Do not over bake. Mine only took 22 minutes. Place on wire rack to cool.

10Frosting: In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until fluffy.

11In another bowl, beat heavy cream until stiff peaks form.

12Fold whipped cream into cream cheese mixture.

13Frost cake. I sprinkled the top with some fresh nutmeg. You could also use your favorite cream cheese frosting, if not wanting to use the whipping cream - cream cheese recipe.
