These are always well recieved by family and guests...great way to use up the egg nog. Note: Other items can be added to the batter, like mini chocolate chips, ground macadamian nuts,,etc..

Ingredients For egg nog muffins

2 crich egg nog
-
1/2 tsprum liquor or extract,your choice

1 1/2 cself-rising flour
- STREUSEL TOPPING:

1/3 call purpose flour
-
1/3 cgranulated sugar
-
1/2 tspground nutmeg
-
2 Tbspvery cold butter
How To Make egg nog muffins

1Heat oven to 350^. Line a 12- cup tin with foil inserts and spray the insides. In a small bowl add the egg nog ,rum, and whisk in the self-rising flour. Use a cookie scoop to portion into each cup. Set aside.

2Strusel topping: Combine the flour, sugar and nutmeg. Cut in the cold butter until small pea size crumbs are formed.

3Sprinkle evenly on top of each muffin cup. Bake 18-20 minutes, or until tested done with a tooth pick.
