These are always well recieved by family and guests...great way to use up the egg nog. Note: Other items can be added to the batter, like mini chocolate chips, ground macadamian nuts,,etc..

Ingredients For egg nog muffins

  • 2 c
    rich egg nog
  • 1/2 tsp
    rum liquor or extract,your choice
  • 1 1/2 c
    self-rising flour
  • STREUSEL TOPPING:
  • 1/3 c
    all purpose flour
  • 1/3 c
    granulated sugar
  • 1/2 tsp
    ground nutmeg
  • 2 Tbsp
    very cold butter

How To Make egg nog muffins

  • 1
    Heat oven to 350^. Line a 12- cup tin with foil inserts and spray the insides. In a small bowl add the egg nog ,rum, and whisk in the self-rising flour. Use a cookie scoop to portion into each cup. Set aside.

    Strusel topping: Combine the flour, sugar and nutmeg. Cut in the cold butter until small pea size crumbs are formed.

    Sprinkle evenly on top of each muffin cup. Bake 18-20 minutes, or until tested done with a tooth pick.
