easy chocolate irish cupcakes

I made this easy version of cup cakes for my husband to share with his co workers on the job on St Patrick's Day. Adding the instant coffee granules and coffee flavoring brings out the chocolate in the cup cakes. Adding heavy whipping cream instead of water keeps them moist. Just something to share on the big day simple and easy. He said there were none left and they did like them. That was all that was needed, something to go with their coffee or cup of tea. Quick easy and simple.

Ingredients For easy chocolate irish cupcakes

1 boxbetty crocker chocolate cake mix

2 tspinstant coffee granules crushed

1 1/2 tspcoffee flavor

3 lgeggs, room temperature

1/3 cvegetable oil or canola

1 cheavy whipping cream

1/4 cmint cream liqueur

1 canfrosting ready made (i chose green for st patrick's day

11/2 tsppeppermint extract
How To Make easy chocolate irish cupcakes

1Preheat oven to 350 degrees F. The main ingredients for the cupcakes.

2Some of the other ingredients used for the cupcakes.

3Add all of the cake mix ingredients to a large bowl, cake mix, coffee granules, coffee flavor, mint cream, eggs, oil & whipping cream.

4Line muffin tin with 24 cupcake liners. I always spray mine with non stick cooking spray.

5Beat cake mix ingredients until well blended about 3 minutes. Fill muffin cups about 3/4 full. Then place in preheated 350 degrees F. oven and bake for about 18 to 20 minutes or till toothpick inserted in center comes out clean.

6Cool completely before frosting. Add the peppermint extract to the can frosting and stir to blend. Then frost cupcakes as desired when cooled.
