The crazy part of this dreamcicle cheesecake is that there is not one orange ingredient at all! No juice, zest, extract, coloring - nada! The carrot puree and cream cheese mixture combine and viola... it tastes like a dreamcicle in cheesecake form. Try this just once... if anything just to say you did (: Then try it out on your friends and family - ask them what they think is in it...what fun that will be!

Ingredients For crazy carrot dreamsicle cheesecake

  • GRAHAM CRACKER CRUST: YOU CAN USE AN 8" READY GRAHAM CRUST IF YOU LIKE
  • 1 1/2 c
    graham cracker crumbs
  • 1/4 c
    sugar
  • 6 Tbsp
    melted butter
  • FOR CARROT PUREE:
  • 4 md
    carrots, peeled
  • 2 Tbsp
    brown sugar, firmly packed
  • 1/2 tsp
    vanilla extract
  • 2 tsp
    butter, room temperature
  • FOR CHEESECAKE MIXTURE:
  • 1
    8 oz tub original flavor philadelphia cream cheese spread, room temperature
  • 1/2 tsp
    vanilla extract
  • 1/4 c
    sugar

How To Make crazy carrot dreamsicle cheesecake

    Preheat oven to 350 degrees. Combine graham crackers and sugar in a bowl. Pour in melted butter and mix to combine. Press into spring form or pie baking dish (8"). Bake for 7 minutes. Remove and set aside.

    Slice carrots to 1/4". Put in a dutch oven with water filled halfway in pot. Boil for 15 minutes or until carrots are tender.

    Place carrots in food processor and add brown sugar, vanilla, and butter. Pulse on highest speed until mixture is thick and creamy, with no visible chunks of carrot.

    In your mixer combine cream cheese and sugar. Mix until well combined. Add vanilla, continue to mix on medium speed until light and fluffy.

    Add carrot puree to cream cheese mixture. Mix until well combined. Notice the pretty light orange color.... take a little taste... DID I TELL YOU!! I see you shaking your head yes and smiling (:

    Pour carrot/cream cheese mixture into prepared crust. Place in refrigerator until ready to serve - at least until completely chilled and set. If using a spring form pan run knife around edge before removing form. Enjoy!
