A wonderful dessert to take to a potluck. Or, serve to your Valentine. I derived this recipe from my friend Linda, although I tweaked it somewhat to my liking. Enjoy!

Ingredients For ~ cherry cheesecake dessert ~

1 - 16.5 ozyellow cake mix / reserve 3/4 cup

1egg
-
2 - 3 Tbspvegetable oil - enough to be able to press out into pan

2 - 8 ozcream cheese - softened

1/2 csugar
-
3eggs
-
3 Tbsplemon juice
-
1 1/4 cmilk
-
1 tspvanilla
-
1 lgcan - cherry pie filling ( i use two )
How To Make ~ cherry cheesecake dessert ~

1Preheat oven to 300 degree F. In a medium sized bowl, combine cake mix ( after reserving 3/4 cup ) with 1 egg and oil. Press into bottom and somewhat up the sides of a 9 x 13 baking dish. Set aside.

2In a large bowl, with hand mixer, blend cream cheese with 1/2 cup sugar.

3Add eggs and reserved 3/4 cup cake mix. Beat until smooth.

4Add milk, lemon juice and vanilla. Blend well, make sure you scrape the sides of the bowl.

5Pour evenly into prepared crust. Bake for 50 - 55 minutes or until set and beginning to become golden around edges.

6Spread on the cherry topping and refrigerate until chilled and ready to serve. I also add a dollop of whipped cream to each individual piece.
