I found this recipe in an old Taste of Home magazine.... and Oh, boy is it YUMMY!

Ingredients For billie's southern sweet potato cake

  • 4
    eggs
  • 2 c
    sugar
  • 2 c
    canola oil
  • 2 tsp
    vanilla
  • 2 c
    flour
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1/2 tsp
    ginger
  • 1/2 tsp
    allspice, ground
  • 1/2 tsp
    salt
  • 3 c
    shredded, peeled, sweet potatoes ( about 2 med)
  • 1 c
    walnuts,chopped
  • frosting:
  • 1 pkg
    8oz. cream cheese
  • 1/2 c
    butter, softened
  • 1 tsp
    vanilla
  • 2 c
    confectioners' sugar

How To Make billie's southern sweet potato cake

    Preheat oven to 350* Grease a 9x13 inch pan.

    In a large mixing bowl, beat eggs, sugar, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, salt, and spices; gradually beat into egg mixture. Stir in sweet potatoes and walnuts

    Transfer to a prepared pan. Bake 40-50 minutes or until a toothpick inserted into the center comes out clean. Cool completely in the pan on a wire rack.

    In a small bowl, beat cream cheese, butter and vanilla until well blended, add in the confectioner's sugar beating well until smooth, Spread over cooled cake... and refrigerate. Enjoy!
