My poor auntie, always on a diet, came up with this delicious bread that's very cake-like. Calories: 150 Fat: 23 grmas. Carbs: 32 grams

Ingredients For auntie's low-fat carrot cake bread

1-1/4 cwhole wheat flour

2-1/2 tspbaking powder

1/8 tspsalt

1-1/2 tspcinnamon

1/2 clight brown sugar

3/4 craisins
-
4carrots, peeled and shredded

2 lgeggs
-
1 Tbspoil, i used canola

1/2 cpowdered sugar

3 Tbspfat-free milk
How To Make auntie's low-fat carrot cake bread

1Heat oven to 325. Line loaf pan w/ parchment paper, lightly spray paper w/ cooking spray.

2In lg bowl, whisk together flour, baking powder, salt and cinnamon. Stir in brown sugar, raisins, carrot, eggs and oil.

3Mix well. Spoon into pan. Bake 1 hr, or until a toothpick inserted in center comes out clean. I would check it at 50 mins to be sure. Cool. Peel off parchment paper. In small bowl, whisk together powdered sugar and milk until smooth. Drizzle over bread.
