applesauce gingerbread cake

My first MIL used to make this cake. I adored it served with a dollop of softly whipped cream. She passed away more than 35 years ago but I think of her every time I make this or one of her other recipes. Loved that lady!

Ingredients For applesauce gingerbread cake

1/2 csugar

1 1/4 cflour

1 tspground ginger

1/4 tspcinnamon

1 1/2 tspsalt

1/2 cmolasses
-
1/2 cneutral oil
-
1egg
-
1/2 capplesauce
-
1 tspbaking soda
-
1/2 cboiling water
How To Make applesauce gingerbread cake

1Combine dry ingredients

2add molasses, oil, egg and applesauce. Blend well

3Add soda to boiling water and mix immediately in to the rest of the ingredients. Pour in to an 8" x 8*' greased pan. Bake at 350 45 - 50 minutes

4Optional Glaze: 1 cup icing sugar, 1 tbsp lemon juice. Mix and pour over cake while warm
