applesauce cake

I make this cake with my recipe for homemade applesauce. I have the link to the recipe n the instructions below. You can use jarred applesauce as well. This cake is moist and has a great mix of spices in it. I also use organic coconut palm sugar for the brown sugar, but regular light brown sugar will work fine too. We eat it without any frosting but you could add a glaze or top it with confectioners sugar.Sometimes we drizzle a little pure maple syrup over it! I hope you try this cake and enjoy it as much as our family does!

Ingredients For applesauce cake

  • 2 c
    all purpose flour
  • 1/2 c
    coconut palm sugar or light brown sugar, lightly packed
  • 1 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon
  • 1 tsp
    ginger
  • 1/2 tsp
    allspice, ground
  • 1 tsp
    pumpkin pie spices (pre-mixed)
  • 1/2 c
    sugar
  • 2 c
    applesauce, unsweetened
  • 2
    eggs, lightly beaten
  • 2 tsp
    vanilla extract
  • 1/4 c
    canola oil or vegetable oil
  • 2 Tbsp
    pure maple syrup

How To Make applesauce cake

    Preheat oven to 350 degrees. Spray a bundt pan with cooking spray, I also add a layer of Baker's Joy spray to keep the cake from sticking. Just make sure the pan is coated well.

    In a large bowl, sift together dry ingredients. Mix in coconut palm sugar (or brown sugar). Stir ingredients to blend them well.

    In a medium bowl lightly beat eggs and add other wet ingredients. Blend well.

    Combine wet and dry ingredients into large bowl. Mix just until combined, do not over mix.

    Put batter into prepared bundt pan and smooth to even out batter. Bake in the center of the oven for 40-45 minutes. Ovens vary so test at 40 minutes to see if toothpick comes out clean, add 5 minute intervals as needed.

    Cool cake for 10 minutes before turning it onto a plate for serving.
