This cake has great flavor packed in a small pan! It has almond, lemon and vanilla- what could be better? I used Coconut palm sugar in mine but regular white sugar will work fine.

Ingredients For almond cake

  • 1/4 c
    butter, softened
  • 3/4 c
    sugar (coconut palm or regular white)
  • 1
    egg
  • zest of one lemon
  • 1/2 tsp
    almond extract
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 c
    all purpose flour
  • 1/2 c
    milk
  • 1/3 can
    almonds, sliced
  • cinnamon & sugar to sprinkle on top

How To Make almond cake

    Preheat oven to 375degrees. Grease a 9X9, 8X8 or round cake pan.

    Combine softened butter and sugar until fluffy. Add egg and lemon zest and combine. Add in almond and vanilla.

    In a separate bowl, sift together flour, salt, baking soda and baking powder. Add flour mix to the butter mix alternately with the milk. Stir just to combine, do not over mix.

    Place batter in pan. Sprinkle with a mixture of cinnamon and sugar. Top with sliced almonds. Bake at 375 degrees for 20-25 minutes. Ovens vary so keep your eye on it in the last 5 minutes. It should get golden brown and a toothpick comes out clean when it's done. Let cool 30 minutes before slicing.
