I was forced to figure out a cake alternative for my daughter's birthday. She is allergic to 7 foods. I was surprised when we served this allergy friendly cake at her party that the guests had no idea it was anything other than a "regular" cake.

    flour, all purpose
  • 1 c
    sugar
  • 1/2 c
    cocoa powder
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1/3 c
    canola or vegetable oil
  • 1 Tbsp
    white vinegar
  • 1 tsp
    vanilla extract
  • 1 c
    rice milk
  • 1 Tbsp
    earth's balance buttery spread (soy free & dairy free) for greasing pan
