This is a lovely tasty cake with delicious blueberries and coconut, they go really well together. Lovely for a kids treat after school or with a cuppa in the morning for your "elevenses" as we say enjoy xx

Ingredients For a blueberry & coconut cake

  • 3/4 c
    softened butter
  • 1 c
    castor sugar
  • 2/3 c
    desiccated coconut
  • 1 tsp
    pure vanilla extract
  • 1 c
    ground almonds
  • 1 1/3 c
    self raising flour
  • 1/ 3/4 c
    fresh blueberries
  • 2
    large eggs

How To Make a blueberry & coconut cake

    Preheat oven to 350f and line the base of a 22cm round spring form tin with baking paper
  • 2
    Cream the butter and sugar until light and fluffy, add the eggs, vanilla and almonds. Whisk again. Fold in the flour and coconut to combine and gently fold in the blueberries
  • 3
    Pour mix into tin smooth out the top and bake for 45-50mins until gold on top. Delicious served with whipped cream or custard or on its own with a nice coffee
