1-1/2 cgrated, unpeeled zucchini

1 cbutterscotch chips

1 cchopped walnuts
How To Make zucchini butterscotch cookies

1Cream butter and sugar. Add egg and vanilla and beat.

2Mix dry ingredients together; add to butter mixture. Stir in zucchini, chips, and nuts. Let stand a while as zucchini will give moisture and they will be easier to drop.

3Bake at 12 to 15 minutes at 350 degrees
