These are inspired by woven Scandinavian paper heart pockets. My daughter lived in Norway for 18 months and we've loved making Scandinavian treats. We have Norwegian, Danish, and Swedish ancestry, so this feels like a special tribute to our ancestors, as well!

    butter, softened
  • 1 & 1/2 c
    granulated sugar
  • 1
    egg
  • 2 tsp
    vanilla extract
  • 1/2 tsp
    red food coloring (more if you want a darker pink)
  • 2 & 3/4 c
    flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder

    Preheat oven to 375 degrees. In a large bowl, beat butter and sugar until smooth. Beat in egg and vanilla. Spoon half of this mixture into a separate bowl and add food coloring to make one of the mixtures pink. (If you wait until entire batter is made before adding the coloring, it will be harder to get an overall solid pink color with no streaking)

    Stir dry ingredients together in a medium bowl. Add half to white mixture and half to pink mixture. Beat well. Chill.

    Roll out each dough to ¼ inch thick, then cut into ½-inch wide strips with a knife or pizza cutter. Weave strips into solid “placemat,” then cut into heart shapes, using cookie cutter. Transfer to ungreased cookie sheets and bake 8-12 minutes, depending on size of cookies. Cool 1 minute before transferring to racks, to cool completely. Makes 14-16 large cookies. Recipe doubles well.
