I found this recipe in one of my cookbook and i absolutely love them . They are a favorite of all my friends . They request it all the time.....

Ingredients For white macadamia nut cookies

2 cflour

1/2 tspbaking soda

3/4 csalted butter , softened

1 cbrown sugar, light

1/2 csugar

1egg at room temperature

1egg yolk at room temperature

2 tsppure vanilla extract

3/4 cmacadamia nuts, chopped

3/4 cwhite chocolate chips
How To Make white macadamia nut cookies

1Preheat oven to 325 F

2Mix the flour and baking soda in a bowl and set aside. With an electric mixer or stand mixer with paddle attachment,cream the butter and sugars together.

3Add the egg,egg yolk and vanilla and mix well . Gradually add the flour mixture and stir until a dough forms.( may take a couple of min of stirring)Fold in the white chocolate chips and macadamia nuts. Do not over mix the dough at any point in this process.

4Chill dough for at least 30 min. in the fridge. Drop by tablespoonfuls onto baking sheet. Press a few more white chocolate chips and macadamia nut pieces onto the tops for decoration. Bake for 10-12 minutes or until edges are slightly browned. The centers should appear very soft and puppy. Let cool on a wire rack completely and enjoy.

5Make sure to keep dough cold at all times while the batches are baking. I kept mine in the refrigerator in between batches.
