These are so good - a nice soft cookie. I made these with a friend the first time and have made them a couple of more times. My daughter's new favorite cookie.

These strawberry cookies are delicate, soft and sweet. With just a hint a lime in the undertones, they are kind of refreshing. The white chocolate chips and fresh strawberries are a lovely flavor combo. This is a great spring or summer cookie when strawberries are nice and fresh. Very yummy!

Ingredients For white chocolate strawberry cookies

  • 1 c
    butter, softened
  • 1 pkg
    cream cheese, softened, 8 oz.
  • 2 c
    sugar
  • 1
    egg
  • 1 1/2 Tbsp
    zest from 3 limes, zest limes before cutting and juicing
  • 1 Tbsp
    fresh lime juice
  • 3 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 2 c
    fresh strawberries, finely chopped to about the size of chocolate chips (note: don't chop the strawberries until shortly before you're going to add them to the dough)
  • 1 pkg
    white chocolate chips, 11.5 oz.

How To Make white chocolate strawberry cookies

    Preheat oven to 350°. In a large bowl, cream the butter, cream cheese, and 2 cups of sugar until light and fluffy.

    Beat in egg, lime juice, and lime zest.

    Combine the flour, baking powder, and salt; gradually add to the creamed mixture and mix well.

    Add the white chocolate chips. Mix in gently.

    Gently fold in chopped strawberries (drain any accumulated juices first).

    Gently scoop into balls on a greased baking sheet and bake at 350° for 8-10 minutes or until bottoms are lightly browned.

    Cool 1 minute before removing to wire racks.

    Best if consumed within a couple of days. If they even last that long. Enjoy!
