These are so good - a nice soft cookie. I made these with a friend the first time and have made them a couple of more times. My daughter's new favorite cookie.

These strawberry cookies are delicate, soft and sweet. With just a hint a lime in the undertones, they are kind of refreshing. The white chocolate chips and fresh strawberries are a lovely flavor combo. This is a great spring or summer cookie when strawberries are nice and fresh. Very yummy!

Ingredients For white chocolate strawberry cookies

1 cbutter, softened

1 pkgcream cheese, softened, 8 oz.

2 csugar

1egg

1 1/2 Tbspzest from 3 limes, zest limes before cutting and juicing

1 Tbspfresh lime juice

3 call-purpose flour

1 tspbaking powder
-
1 tspsalt

2 cfresh strawberries, finely chopped to about the size of chocolate chips (note: don't chop the strawberries until shortly before you're going to add them to the dough)

1 pkgwhite chocolate chips, 11.5 oz.
How To Make white chocolate strawberry cookies

1Preheat oven to 350°. In a large bowl, cream the butter, cream cheese, and 2 cups of sugar until light and fluffy.

2Beat in egg, lime juice, and lime zest.

3Combine the flour, baking powder, and salt; gradually add to the creamed mixture and mix well.

4Add the white chocolate chips. Mix in gently.

5Gently fold in chopped strawberries (drain any accumulated juices first).

6Gently scoop into balls on a greased baking sheet and bake at 350° for 8-10 minutes or until bottoms are lightly browned.

7Cool 1 minute before removing to wire racks.

8Best if consumed within a couple of days. If they even last that long. Enjoy!
