Made these tonight, and the nieces *loved* them! I got the recipe from "Cookies" by Taste of Home. I changed it very slightly.

Ingredients For white chocolate oatmeal coconut cookies

1 cbutter, softened

1/2 csugar

1/2 cbrown sugar

1egg
-
3 tspvanilla extract

1 tspcoconut extract

1 1/2 cwhite baking morsels

1 1/4 cflour
-
1 tspbaking soda
-
1 1/2 coats (quick cooking)

1 cflaked coconut (toasted or not)

additional sugar
How To Make white chocolate oatmeal coconut cookies

1Preheat oven to 350 degrees. Cream together butter, sugar, and brown sugar. Add egg, vanilla and coconut extract and mix well. In separate bowl, combine flour and baking soda. Gradually add to the butter mixture. Stir in white morsels, oats and coconut.

2Drop by tablespoons about 3" apart on ungreased baking sheet. Dip bottom of cup into sugar and slightly flatten cookies. Bake at 350 for 9-11 minutes, or until slightly golden.

3Move to rack to cool completely.
