How To Make white chocolate macadamia nut cookies, my way
-
1Melt butter in large bowl in microwave about 1 min. It doesn't need to melt all the way, since you are going to mix it with beaters. Add both sugars, mix. Splash in vanilla, add 2 eggs, mix. Add flour 1 1/4 cup, mix, then add remaining and mix well.

2The can of macadamia nuts, put nuts into a ziplock bag and beat so some is like paste, and other bits have small pieces. The two bags of nuts, you will just open and mix in....so now add both of the macadamia nuts to the mixture and beat to incorporate.

3At this point, I took some dough out to make cookies for my mother in law, who does not like white chocolate. To the rest, I added the white chocolate chips and mixed one last time.

4Line cookie sheets with parchment paper, and put by rounded teaspoons on to the cookie sheets. Bake at 350 degrees for 10-12 min. Slide off the cookie sheets on the parchment paper to cool a couple minutes, then remove from parchment paper to wax paper on the counter to cool all the way. Then reuse the parchment paper once more for another batch. I used 3 cookie sheets, one baking, one cooling, and one ready to head into the oven...
