Ingredients For vanilla wafer apple crunch

  • 1 3/4 c
    vanilla wafers
  • 1/2 c
    sugar or splenda divided
  • 1/4 c
    butter or margarine, melted
  • 1 tsp
    cinnamon
  • 1 tsp
    grated lemon peel
  • 4 md
    baking apples, peeled, cored and sliced
  • 1 Tbsp
    lemon juice

How To Make vanilla wafer apple crunch

  • 1
    In small bowl stir together cookie crumbs and 1/4 cup of sugar. Stir in butter. In another small bowl stir together remaining 1/4 cup sugar, cinnamon and lemon peel. In large bowl toss apple slices with lemon juice.

    In 8 x 8 x 2-inch baking dish layer half of apple mixture, sprinkle with half of sugar mixture and half of cookie mixture. Repeat layers. Tightly cover with foil. Bake at 350°F for 30 minutes. Uncover. Bake at 350°F about 15 minutes more or until crisp. Serve warm.
