If you like toffee and almonds this cookie is for you! They are fun to make and nobody can keep their hands off of them. They always go quickly. Note: This makes several dozen of cookies, so it's great for the Holidays or large parties, pot lucks, family reunions, etc.

Ingredients For toffee almond sandies

  • 1 c
    butter, softened
  • 1 c
    sugar
  • 1 c
    confectioners' sugar
  • 1 c
    canola oil
  • 2
    eggs
  • 1 tsp
    almond extract
  • 3-1/2 c
    all purpose flour
  • 1 c
    whole wheat flour
  • 1 tsp
    baking soda
  • 1 tsp
    cream of tarter
  • 1 tsp
    salt
  • 2 c
    almonds, chopped
  • 1 pkg
    (8 ounces) milk chocolate english toffee bits
  • additional sugar

How To Make toffee almond sandies

  • 1
    In a large bowl, cream butter and sugars until light and fluffy. Beat in the oil, eggs and extract. Combine the flours, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in almonds and toffee bits.

    Shape into 1-in. balls; roll in sugar. Place on ungreased baking sheets and flatten with a fork. Bake at 350° for 12-14 minutes or until lightly browned.
