These cookies I made sort of by accident and realized I had made the best tasting cookie I ever ate! I love it when that happens. I was actually going to add some chocolate chips to it and I realized I had none, but I did have the Andes Chocolate Mint morsels. They have such a wonderful and rich flavor, I won't go back to using plain chocolate chips after this. Andes has two kinds of chocolate mint morsels - the chocolate mint and the white chocolate mint. Use either one, they are both terrific. These are simple and quick to make. Even the kids can make these! Great for Christmas baking.

This is Christmas in a cookie! Mint and chocolate is such a great combination and these little seasonal Andes baking chips are just wonderful in this cookie. It's a simple cookie that takes no time to whip up. These will be great on a cookie tray, included in a cookie exchange, or even for the kids to put out for Santa. But grab some milk to wash it down.

  • 1 box
    chocolate cake mix (any brand will do, but a fudge or dark chocolate cake mix works best)
  • 1/4 c
    water
  • 1/4 c
    vegetable oil
  • 1 lg
    egg
  • 1 c
    Andes brand chocolate mint baking morsels

How To Make the ultimate chocolate mint cookie

Watch your baking time. For our oven, we cut a few minutes off the cookies and they were perfect.

    Preheat oven to 375 degrees. Open boxed cake mix into a large bowl and add water, oil and egg. Mix together well. Add the chocolate mint morsels and mix well.

    Spray cookie sheets with nonstick spray.

    Place dough by the spoonful on cookie sheets, 2 inches apart. (I don't spray my cookie sheets, I bake on parchment... I like it better. No greasing of pans, no messy clean-up!! And the cookies scorch less when baking on parchment paper.)

    Bake at 375 degrees for 12-15 minutes. (Each oven is different. Check them after 12 mins.)

    Note: If you cannot find the Andes Brand of chocolate morsels, use crushed peppermint candies. It also needs to be said this is a wonderful cookie recipe if you want to make a variety. Just use whatever flavor of cake mix you like and add whatever you want to it... chocolate chips, butterscotch chips, nuts, raisins, etc. But I think you will find the chocolate cake mix and the Andes morsels produce an exciting and rich flavor!
