This is another option for those who cannot eat chocolate. Carob is dark and rich, and sweet. It looks like cocoa, but does not really taste like chocolate, in my opinion. However, carob is good in its own right and these have a very pleasant flavor. These are made very similar to my Butterscotch Brownies. You can normally find carob powder in the baking section of major supermarkets and health food stores.

1/4 cbutter

1 cupsugar or brown sugar

1egg

1 tspvanilla

1/2 call purpose flour

3-4 Tbspcarob powder

1 tspbaking powder

1/2 tspsalt

1/2 cchopped pecans
How To Make susan's carob bars

1Melt butter and stir together with sugar until blended. Beat in the egg and vanilla.

2Sift together the flour, carob powder, baking powder, and salt. Stir the flour mixture into the sugar mixture. Add in the chopped nuts.

3Spread in a greased 9x9-inch pan, and bake at 350 degrees about 20-25 minutes. Cut into bars after cooling.
