These extremely easy cookies are always a hit at a cookie exchange. The recipe calls for a 1/4 teaspoon of almond extract, but I actually like to add a few drops more for more almond flavor.

Ingredients For spumoni chunk cookies

1 pkgbetty crocker sugar cookie mix

1/2 cbutter or margarine, softened

1egg
-
1/4 tspalmond extract

1 cdried cherries, coarsely chopped or use cherry flavored craisins

1 csalted dry roasted pistachio nuts, coarsely chopped

1 csemi sweet chocolate chips
How To Make spumoni chunk cookies

1Preheat oven to 375. In a large bowl stir cookie mix, butter, egg and extract unitl soft dough forms. Stir in cherries, nuts and chocolate.

2On un-greased cookie sheet, drop dough by heaping tablespoons about 2 inches a part

3Bake 10 to 12 minutes until edges are golden brown. Cool 2 minutes; remove from cookie s to cooling racks. Cool completely.
