Perfect mix of pumpkin and spice in a cookie. Really cool to cut out with a pumpkin cookie cutter.

Ingredients For spiced pumpkin cookies

  • 3 c
    flour
  • 2 tsp
    baking powder
  • 2 tsp
    pumpkin pie spice
  • 3/4 c
    butter, cut into chunks
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar
  • 1 lg
    egg
  • 1/2 c
    pumpkin puree

How To Make spiced pumpkin cookies

  • 1
    Whisk flour, baking powder and pumpkin pie spice together.

    Cream butter and sugars together until light and fluffy.
  • 3
    Beat in egg and pumpkin.
  • 4
    Add flour, mixing until just combined.
  • 5
    Refrigerate 30 minutes (or overnight) before rolling.

    Line cookie sheets with parchment paper.

    Roll dough to 1/4" thickness and cut out with cookie cutter.

    Preheat oven to 350 degrees.

    Freeze cookies 10 minutes before baking.

    Bake 10 -12 minutes. Let cool 2 minutes on cookie sheet before transferring to wire rack.
