3/4 cbutter, cut into chunks

1/2 csugar

1/2 cbrown sugar

1/2 cpumpkin puree
How To Make spiced pumpkin cookies

1Whisk flour, baking powder and pumpkin pie spice together.

2Cream butter and sugars together until light and fluffy.

3Beat in egg and pumpkin.

4Add flour, mixing until just combined.

5Refrigerate 30 minutes (or overnight) before rolling.

6Line cookie sheets with parchment paper.

7Roll dough to 1/4" thickness and cut out with cookie cutter.

8Preheat oven to 350 degrees.

9Freeze cookies 10 minutes before baking.

10Bake 10 -12 minutes. Let cool 2 minutes on cookie sheet before transferring to wire rack.
