It has become a tradition in my house to make these special frosted sugar cookies during Holidays. They are my family's favorite.

2 stickmargarine

1 ccrisco

1 cpowdered sugar

1 cgranulated sugar

1 tspbaking soda

1 tsppure vanilla or lemon extract if you like more lemon

2eggs -beaten

4 cflour

1 tspcream of tartar
- LEMON FROSTING

8 ozsoftened cream cheese

1 cpowdered sugar
-
1-2 tsplemon juice
-
1 cheavy whipping cream
How To Make soft sugar cookies with fluffy lemon frosting

1In standing mixer, cream margarine, crisco, eggs, vanilla, and sugars. (sub lemon extract if you want more lemon flavor) In separate bowl; sift flour, soda, and cream of tartar.

2Gradually add dry ingredients to creamed and mix until soft dough forms. Roll into 1" balls and place onto ungreased cookie sheet.(I use stonewear, as it bakes more evenly)

3Bake cookies in 350 degree oven for approx 7-9 minutes. This will vary according to your oven. Do NOT let them brown. I generally pull them out as soon as the edges start turning a light golden color. Cool before removing from cookie sheet.

4For frosting; Beat cream cheese, powdered sugar, and lemon juice until fluffy. If you choose to use food coloring, add it here. In separate chilled bowl, beat heavy cream until stiff peaks form. Fold in to cream cheese mixture until well blended. Refrigerate approx 1 hour before frosting cookies. Top with sprinkles if you desire. Makes 4 dozen.
