Soft, chewy peanut butter cups with a kiss on top. I make these for the holidays, and they are the first to disappear. This recipe is softer than a peanut butter blossom cookie-the reason I love it so much.

1 ccreamy peanut butter

1/2 cbutter, softened

3/4 cpacked light brown sugar

1 tspvanilla extract

1 1/2 call-purpose flour

How To Make soft peanut butter bites with a kiss on top

1Preheat the oven to 350 F. In a large bowl, cream together the peanut butter, butter and sugars using a hand mixer (or a stand mixer), until soft and creamy. Add the egg and vanilla extract and continue to mix until fully combined.

2In a separate bowl, whisk together the flour, baking soda and salt. Add these dry ingredients to your large bowl slowly, continuously mixing using your mixer. Don't overmix.

3Roll the dough into 2-inch balls and place in a mini muffin tin that has been sprayed with nonstick cooking spray. Flatten slightly with a spoon or your fingers.

4Bake for 8-10 minutes but don't overbake to keep them soft and chewy. Immediately place a kiss in the middle of each one. Allow to cool and store in an airtight container.
